Ingredients:

  • 1 1/2 pound carrots
  • 2 onions
  • 4 potatoes
  • 1 tablespoon butter
  • 1 tablespoon tarragon
  • 2 1/2 pints chicken (or veg) stock
  • 1 tablespoon sugar
  • salt & pepper
  1. Saute onions in butter. Add vegetables, saute 15 minutes.
  2. Add stock & seasonings, simmer gently 2 hours.
  3. Mash vegetables.
  4. Can be made ahead and refrigerated.
