Ingredients:
- 1 1/2 pound carrots
- 2 onions
- 4 potatoes
- 1 tablespoon butter
- 1 tablespoon tarragon
- 2 1/2 pints chicken (or veg) stock
- 1 tablespoon sugar
- salt & pepper
- Saute onions in butter. Add vegetables, saute 15 minutes.
- Add stock & seasonings, simmer gently 2 hours.
- Mash vegetables.
- Can be made ahead and refrigerated.
