Ingredients:

  • 1 cup wheat flour
  • 1 1/2 cup white flour plus 3/4 cup more as needed
  • 1 teaspoon salt
  • 3/4 teaspoon yeast
  • 3/4 teaspoon allspice
  • 1/8 teaspoon nutmeg
  • 1 1/4 cup ice water – more if needed
  • 1/2 teaspoon orange zest
  • 2 tablespoons butter
  • 3/4 cup oatmeal
  • 2/3 cup boiling water
  • 6 tablespoons brown sugar
  • 1/2 cup dried cranberries
  1. Mix 2 1/2 cup flour, salt, yeast, allspice and nutmeg. Add ice water and orange zest. Mix thoroughly. Cover the bowl with plastic wrap.
  2. Put in fridge for 3 to 10 hours.
  3. Then let rise at cool room temperature for 12 to 18 hours.
  4. Cook the oatmeal in the boiling water, add brown sugar. Then mix with the dough and 3/4 c. of flour and cranberries. Place in 9 x 5 loaf pan. Sprinkle oats on top.
  5. Let rise 2 hours.
  6. Bake at 375 for 65 minutes, making sure it’s done.
