Ingredients:
- 1 cup wheat flour
- 1 1/2 cup white flour plus 3/4 cup more as needed
- 1 teaspoon salt
- 3/4 teaspoon yeast
- 3/4 teaspoon allspice
- 1/8 teaspoon nutmeg
- 1 1/4 cup ice water – more if needed
- 1/2 teaspoon orange zest
- 2 tablespoons butter
- 3/4 cup oatmeal
- 2/3 cup boiling water
- 6 tablespoons brown sugar
- 1/2 cup dried cranberries
- Mix 2 1/2 cup flour, salt, yeast, allspice and nutmeg. Add ice water and orange zest. Mix thoroughly. Cover the bowl with plastic wrap.
- Put in fridge for 3 to 10 hours.
- Then let rise at cool room temperature for 12 to 18 hours.
- Cook the oatmeal in the boiling water, add brown sugar. Then mix with the dough and 3/4 c. of flour and cranberries. Place in 9 x 5 loaf pan. Sprinkle oats on top.
- Let rise 2 hours.
- Bake at 375 for 65 minutes, making sure it’s done.
